La Torrija 是一個源自法國的甜點。一般是由一片浸泡過牛奶或者紅酒的麵包裹上雞蛋油煎而成。煎完後會在外面塗抹蜂蜜、糖蜜或者白糖來增加甜味,有時也會加肉桂粉來調味。

La Torrija 是基督教大齋期以及聖週(復活節)期間最常見的食品。在西班牙的農村,人們為了不浪費前幾天沒吃完的麵包,也會製作這個甜點。

歷史上第一次出現類似甜食的記載要追溯到古羅馬時期的一位著名的美食家阿皮基烏斯的記載。他收集了一份第四和第五世紀的拉丁食譜。在食譜中提到過用片狀麵包浸泡牛奶,但並沒有裹上蛋汁,也沒有起特別的名字,在食譜中就被叫做aliet dulcia (一盤甜點)。

中世紀歐洲,這樣的麵包浸牛奶加糖被稱做 suppe dorate, soupys yn dorye, tostées dorées y payn purdyeu。「Suppe,soupys」等詞就是英文的Soup,指含有很多液體成分。

在西班牙,La Torrija 或者 Torreja 首次被記載來自於十五世紀天主教雙王時期的詩人和音樂家胡安‧德爾恩希瑪,他寫道:用蜜和很多雞蛋來做 Torrija,來給生產後的產婦恢復身體。

在二十世紀La torrija是在馬德里小吃店非常常見的食物,一般和一杯紅酒一起享用。

製作方法

  1. 麵包切片(最好是幾天前的麵包)
  2. 牛奶加糖,加肉桂粉,放在奶鍋裡加熱,不要煮開
  3. 麵包片放進牛奶中浸泡十五分鐘
  4. 雞蛋打成蛋汁,把麵包片從牛奶中拿出,放進蛋汁中,兩面都裹上蛋汁
  5. 準備平底油鍋,將裹好蛋汁的麵包放如油鍋中煎炸
  6. 至顏色金黃就可以把麵包片拿出,放在架上瀝油
  7. 冷卻後,根據個人喜好,在外面塗抹上白糖或者蜂蜜
